Fall Friday
I made the carrot tart this morning while Ingrid was playing. It turned out really pretty. Next time I’ll pre-cook the carrots a bit so they soften more evenly, but I love how it looked coming out of the oven.
We had a slice for lunch and thought it’d go well with steak so… we had to have steak dinner! I went to Reading Terminal to grab some.
I always have to look up how to cook steak every single time, and every time I think, this time I’ll remember. Maybe I finally will, because these came out just right.
Here’s what I did:
I let the steak sit out for about an hour, then patted it dry and salted both sides. I put my cast iron skillet in a 500° oven for 20 minutes so it got blazing hot. Then I moved it to the stove, added a bit of oil, and seared the steak for about 4 minutes on one side, 3 or so on the other.
I checked the temp, 130°, medium rare, perfect. Let it rest for a few minutes, then sliced against the grain.
Simple, reliable, and maybe (hopefully) the version I’ll actually remember next time.
Other things:
This little “DRINK” glass was a Salvation Army find, one dollar, probably from the 1930s based on my research. I love how heavy it is.
I’ve been saving vegetable scraps again for stock, my new quiet obsession. It makes me feel like things are carrying over from one meal to the next. I know I didn’t invent this but it makes me feel very cook-savvy.
